Be A Part Of the Kashmiri Food Festival, Renaissance Bengaluru Race Course Hotel

Wazwan is a multi-course meal in the Kashmiri cuisine, the preparation of this dish is actually considered as an art and a point of pride in the Kashmiri culture and identity. The whole procedure of this customary Kashmiri Muslim multi-course feast (36 to be exact!) goes like this- serving and eating the meal like a ritual, where the guests are assembled into four and presented with the food served on a huge plate called trammi or traem. It is mostly served during their weddings. Lush, the fine dining restaurant at Renaissance Bengaluru, Race Course Road, is organizing the Wazwan food festival under the supervision of the food critic Suresh Hinduja, being Chef Sanjeev is a part of the festival. Mr. Hinduja spoke about his collaborations with Chef Bashir Wazza which started in the lanes of Kashmir. The 36 course Muslim Kashmiri meal has been twisted by Mr. Hinduja to complement the taste of a modern Bengalurean. The meal was kicked off with "Kahwa Punch" which was a vodka-based cocktail resembled the modern iced tea giving a refreshing touch as it contains the goodness of Indian spices-carbon and cinnamon. The "Nadru ki tikki" and Ghost Kebab were apt for the appetizers. The traditional dish "Nadru ki tikki" is always been lotus stem but here it is added with mushroom to gel well with the taste. The ghost kebab tasted good with all the Indian masalas infused into it. kashmiri cuisine Nadru (lotus root) and mushroom kebab The main course witnessed the heaps of rice, "Zereshk Pulao and Gucchi Pulao". Both the pulao was brilliantly prepared with berries and gucchi in particular. The vegetarian dishes like the creamy rajma and Monje Haak (Aaloo Palak) were complementing well with the two different varieties of rice. The slow-cooked mutton dishes namely "Rogan Josh" and "Shalgam Gosht" were tasted well which can be tasted either with rice and bread. kashmiri cuisine Seekh Kebab kashmiri cuisine Zerashk Pulao

 "Sheermal", a bread flavored with saffron tasted slightly sweet and the "Girda" naturally fermented bread can be enjoyed with either the vegetarian or the non-vegetarian curries. "Gustaba Mutton" is generally served at the end of the meal which is undoubted, a stellar. The meal was wrapped up with three varieties of phirnis, the "paan ki phirni" (paan flavored), kesar phirni (saffron-flavored) and Gooar phirni (jaggery flavored).
