The new all-day fine dining
restaurant in town is offering much more than serving Indian classics to its guests. Lapis, nestled in The Oberoi, Bangalore, has got its name inspired by a deep blue gemstone, Lapis Lazuli that signifies honor, wisdom, and vision. This beautifully curated all-day dining space is just too perfect for the guests who look for an experience along with their food. The three striking pillars of the restaurant flow upwards to melt into the ceiling, creating a spectacular "indoor sky" effect. The decor and the layout (indoors and outdoors) have been curated in a way so that each table can experience nature and the diner can have an overall experience.
Talking about the food, the executive chef Robin Batra along with his team has successfully been able to keep the authentic taste of real India while delivering a twist to it. In addition to creative interpretations of the regional food, they also serve Indian soul food for their regular guests.
The lunch buffet celebrates global cuisine has a widespread collection of healthy, nutritious salads, imported cheese, and meats. It has also got a mix of Indian, Oriental, Mexican and American specialities. Lapis has an outlandish menu and some of the thought-provoking dishes that strike the taste buds.

The food of the restaurant has been divided into the Indian classics and the cosmopolitan. "I and chef Nimisha have been traveling to different parts of the country to pick up different recipes and giving our twist to it. I remember when I was in Kerala, my lunch would be at a typical toddy shop, packing some fish curry and cuppa along and going home so those things which are unique and different and you don't find anywhere else and we introduced Toddy fish curry inspired from Kerala.

There is another dish called "Chawal Kukad" which is a Punjabi dish where the whole chicken needs to be ordered a day in advance, is stuffed with rice and wrapped into the atta dough and cook for 6 hours. We wanted to replicate but won't be feasible in the restaurant. Hence, we use the boneless chicken and chicken stock to get the same flavors and prepare it in the same way.
Also, when I was traveling from home to the hotel, I could see lots of local vendors selling green leafy vegetables in the lanes of Bangalore. I could find various varieties- Amaranth, Spinach, Methi which we hand-chopped instead of blending into a fine paste and mixed it with white butter and garlic. That's our version of Karnataka lasooni panchkuta saag", chef Robin Batra, the executive chef told.

In addition to this, Pinky Padmaraj, senior communications manager also mentioned that they tried to give a character to this all-day fine dining restaurant which many in the city misses out.
"We haven't gone to the fusion round, but we have given a twist keeping the true flavors of the recipe", she added.
The restaurant also serves 21-day aged duck which is tender and true to its taste. And it also didn't fail to deliver the taste of Coorgi Pork.
Lapis is the only restaurant in Bengaluru that serves Chicago style deep dish pizzas fresh from the gold mosaic-tiled wood-fired pizza oven that forms the centerpiece of the buffet spread.
Lapis cocktails are yet another highlight. Inspired by the modern periodic table, the drinks are curated for the guests who would love its flavors, colors and also get curious to know the science behind their beverages.

Gin based Aurantium with a citrus tinge, mixed with orgeat syrup and egg white is something one should try. If one is looking for something refreshing, then CuBanite (gold rum, mint, lime) or aGate(white rum, sweet vermouth, caramel, pineapple juice, mint)would be a good choice.
